As we head into the last week of summer, Bev and I wanted to share another yummy recipe. We thought this would be a great time to enjoy that end of summer produce!
Way back in June (doesn’t that seem so long ago???) we were at a get-together and a friend brought this amazing salad. And then within the same week our friend Rupa @salttheplate posted a very similar recipe on her blog. So we knew we had to share this!
Like the salad recipe we posted earlier in the summer, this is really simple and has very few ingredients. So it’s not only easy to make, but these ingredients also give it a variety of colors, textures and flavors. This combination might sound a bit odd, but trust us – it tastes awesome! We’ve also included Rupa’s version down below in case you’d like to try it.
Watermelon Feta Salad
INGREDIENTS
1/4 c. extra-virgin olive oil
2 tbsp. red wine vinegar
1/2 tsp. kosher salt
3 c. cubed seedless watermelon
1 c. medium cucumber, chopped
1 c. crumbled feta
1/2 c. red onion, thinly sliced
1/2 c. coarsely chopped mint
Flaky sea salt, for garnish (optional)
DIRECTIONS
- In a small bowl, whisk together olive oil, red wine vinegar, and salt.
- In a large serving bowl, combine watermelon, cucumber, feta, red onion, and mint. Pour over dressing, tossing to combine.
- Garnish with more mint and flaky sea salt.

Looks delicious! Will have to give it a try. Maybe we can do an end of summer almost-empty-nest celebration after Labor Day! Keep the good summer recipes coming – we refuse to face the fact that summer is coming to an end, while we are up here in Newport in the blazing heat and humidity!
