What’s for Breakfast???

You’re inside on a cold winter morning. The snow is falling outside. A fresh pot of coffee is brewing, and you can smell something delicious baking in the oven…

On a recent Saturday, Bev and I were treated to a wonderful breakfast made by our friend Jen. The featured dish was Puffed Apple Pancake – sweet tart apple slices baked inside of a light pancake batter. Crisp and lightly browned on the outside with a touch of brown sugar and spice on the inside. Warm from the oven and topped with powdered sugar. Yum!

We were all blown away by how delicious it was, and yet so simple! Note that “pancake” is a misnomer! After breakfast we all felt warm and satiated. This was very different from the stuffed and almost comatose feeling you have after consuming a “short stack” drowning in butter and maple syrup! Jen made the recipe a bit healthier by adding more apple and slightly less sugar. This is the perfect dish to make if you’re having company for brunch, or if you have overnight guests; you can spend time chatting with them while it’s baking, instead of being stuck in front of the stove.

And a fun tip – Jen used this cool device (a powdered sugar shaker) to beautifully top the puffed pancake. Who knew this existed? (Well, probably a lot of people, but not me 😆)

  1. This looks like what is often called a “Dutch Baby” — you can also make it savory (i.e. ham & cheese rather than apples, sugar & cinnamon!)

    1. Aha! I always wondered what a “Dutch Baby” was. And I like the idea of using savory ingredients!

      1. Sometimes we make one of each, splitting batter between two small cast iron skillets and cook both at the same time!

  2. Best recipe!!! Had it a second time & was just as delicious as the first time! Only had 2 apples on hand. Sliced them thin & it was plenty. .

    1. Yay! I think the recipe is pretty forgiving – you can play around with it a lot and it will still taste great!
